I know the basics of Python, pandas, matplotlib, and database management systems, but I want to move into more advanced programming. What should I study next, which languages or technologies are currently useful, and how can I use AI as part of my learning without becoming dependent on it?

Use AI as a tool, not as a replacement for thinking. Build projects, get stuck, research the problem, try a solution, and then test and improve it. That cycle will teach you much more than simply asking AI to generate finished code.
