I'm building my first PC in Austria with a budget of about €1,500, not including monitors. I want to use it for gaming—mostly story-driven games such as The Witcher 3—and for 3D modeling, animation, fluid simulations, and physics in Blender. I'm comfortable with 30+ FPS, but I'd like good visual settings without constantly adjusting everything, ideally with performance comparable to a PS5. What parts would you recommend, and are there any monitor suggestions outside the main budget?

That budget can make a very capable hybrid gaming and Blender system. The best parts depend on your Blender workflow, especially whether you render with the GPU or CPU, but you should generally prioritize a strong modern GPU with enough VRAM, a capable multi-core CPU, 32 GB of RAM, and at least a 1 TB NVMe SSD. Make sure to reserve money for a reliable power supply and decent cooling rather than spending the entire budget on the graphics card. For your target of console-like performance and 30+ FPS at good settings, this should be very achievable, especially at 1440p with sensible settings.

I’ll be using Blender, and my games will mostly be story-focused titles like The Witcher 3. I’ve never owned a PC, so matching or slightly exceeding PS5-level performance would already be great.
