I recently built a PC with an AMD RX 6700 XT and want to play demanding games like Elden Ring. Is this graphics card still capable of handling modern AAA games well, or would upgrading make sense?

It depends mainly on your monitor resolution, target frame rate, and CPU. At 1080p, the RX 6700 XT is still a strong card as long as your processor isn't limiting performance. It also handles 1440p well if you're comfortable lowering a few settings instead of using everything on ultra.
The real question is whether you're happy with the performance. If your current games run at the resolution and frame rate you want, keep the card. Upgrade when newer games you actually want to play start falling short and you have the budget for it.
Elden Ring should run comfortably on an RX 6700 XT. You shouldn't need to upgrade just for that game.
The rest of your specifications matter, especially the CPU and monitor. For 1080p gaming, the RX 6700 XT should remain a capable choice for several more years, and it can still provide a good 1440p experience with sensible settings.
