I'm currently using a Ryzen 5 5600G with an RX 9060 XT 16GB graphics card. Would upgrading to a Ryzen 7 5700X provide a noticeable improvement, especially for gaming, or would my money be better spent on another AM4 processor?

The Ryzen 7 5700X is definitely faster than the 5600G. It has more cores, more cache, and doesn’t have the usual performance compromises of the G-series chips. The integrated graphics will be lost, but that shouldn’t matter since you already have a dedicated GPU. At around $143, it sounds like a very good upgrade.
For gaming, the 5700X is an improvement, but it probably won’t feel dramatic in every title. The 5600G has less cache and can hold back a powerful graphics card, so you may see a worthwhile boost in CPU-limited games. The 5700X is also much better for streaming, rendering, and other multithreaded workloads.
A 5500X3D could be a better gaming-focused choice than the 5700X if its price is close. Its 3D V-Cache can improve gaming performance, while the 5700X has two additional cores and is generally better for productivity and other heavily threaded tasks. For a discounted 5700X, though, the value is excellent.
If gaming is your main priority, compare the 5700X with an X3D chip before buying. A 5800X3D would be a much larger gaming upgrade and is the strongest gaming processor available for the AM4 platform, but it only makes sense if you can find one at a reasonable price. Don’t pay a large premium for a regular 5800X or 5800XT, since their gains over the 5700X are relatively small.
The 5800X3D can cost around $300, so it’s a much harder recommendation if the 5700X is available for about $143.
