I'm mainly going to use it for gaming, especially indie titles and some older games. I'm also into photography and do 3D modeling for architecture, so I need it to perform well for those tasks, too.
I'm wondering if 32GB of DDR5 RAM is enough, or if I should splurge for 64GB. I'm currently considering whether to go with a 5080 GPU, which is pretty pricey at $4,432 CAD / $3,217 USD, or to downgrade to a 5070Ti, which would bring the cost down to $3,542 CAD / $2,571 USD. The quietest option for the 5070Ti seems to be the MSI Vanguard, but it's sold out everywhere.
Also, I'm thinking about selling my old 9-year-old PC but have no idea what the market is like. It's an i7 7700K with a BeQuiet! Pro CPU cooler, EVGA GTX 1070, and some decent storage. What do you think I should list it for?

I just built a PC aimed at low noise too. I went with a BeQuiet case, which has decent noise dampening and worked wonders for me during gaming sessions. If you're planning to use your setup long-term, a bit of overkill in specs can work out for future-proofing. Plus, fans from Noctua are great because they can pump out air while being really quiet. Consider those!
