I'm setting up a build with a Ryzen 7 5800XT on an AM4 motherboard, but it seems I'm limited to GPUs in the 4090 series or lower. Can anyone suggest the best graphics cards that would match this setup?

If you're really stuck between the options below the 4090, your best bet is to just go with that 4090 if possible. But be sure to mention your budget and what you'll be using the system for, along with the specs of your PSU!
I'd recommend the 4070 with 12GB or the 4070 Ti with 16GB, depending on your VRAM needs. Just make sure to check what resolution you plan on gaming at!

What really matters here is what resolution and refresh rate your monitor runs at, and what kinds of games you're into. You match the GPU to these factors, rather than just to the CPU. If you're not on a budget, find out what PSU you’ve got as well!
You might also consider something like a 9060XT with 16GB or a 5060 Ti with 16GB. Again, it'll depend on factors like your monitor's resolution and refresh rate!
You mentioned why the 5800XT specifically? There are some great current-gen cards out now that might serve you better!
The 5800XT is actually a great deal around here—usually around $250, but I've seen it dip to about $150 on sale!
