I've been trying to set up a home media server on my old HTPC that was running Windows 10, but I've switched to Linux and it's been a hassle! It took me hours to get through NVIDIA drivers and to format/mount drives. Now, I want to install a media server that can monitor a specific folder and make it accessible throughout my home network. I attempted to download Serviio, but it's not available in the Linux Mint store, and the compiled version seems a bit over my head. Any suggestions for user-friendly media server software?

If you’re looking for a media server, check out Jellyfin. In my experience, it works way better than Plex. For a file server, Samba is reliable too. I run an old laptop with OpenMediaVault, using Samba and Docker containers for Jellyfin.
I use Copyparty for sharing, but just avoid exposing it to the internet for safety. It gets the job done for home use!
You might want to try using Ubuntu with Samba for file sharing and Plex for media. Between those two, they cover everything you could need!
