If you're feeling adventurous, you could try doing a custom install of Arch. It lets you piece together a very lightweight system. I set up cachyOS on my dad's old HP Elitebook, and while KDE is a bit slow, it still works. Just go for a lighter desktop environment, and you'll be fine.
You might want to check out OpenSUSE Tumbleweed with XFCE. I have a Lenovo Thinkpad with 4GB RAM, and while it’s not lightning fast, it gets the job done.
Messing around in a VM is a good idea! You could really slim down Gentoo, especially if you have another more powerful machine to handle some of the compiling tasks.
