I'm using an MSI MPG Z390 Gaming Plus motherboard and I have some 3-pin VDxG fans. Is there an adapter that can help me connect these fans to a 4-pin RGB header, or would I need to get different fans altogether?

You can definitely connect 3-pin RGB fans to a 4-pin header! Just make sure to leave the rightmost pin on the header unconnected; it should work fine that way.
Are you talking about fan headers or RGB headers? They’re actually quite different!
