I've got this old external HDD lying around that I never use, and I'm thinking about installing a Linux distro on it just for fun. Does anyone have thoughts or recommendations on this?

Yeah, you can definitely install Linux on an external HDD! While it might not be the most optimal setup, it's a great way to experiment. If you're just starting out, I'd suggest going for Linux Mint or Fedora. Linux Mint especially tends to be super user-friendly and just works out of the box!
