Can I Use Different Fans for My AIO GPU Instead of the Built-In Ones?

I'm looking to replace the fans on my AIO GPU (Gigabyte Aorus GeForce RTX 3080), but I've hit a snag: the original fans are quite loud and their connection is proprietary, making it impossible to run them directly from the GPU. Since I mostly use my PC for Photoshop and indie games, the GPU doesn't need to run super hot; it's currently only 9°C above ambient. I want to swap out the built-in fans for Noctua fans and control them through the motherboard or a dedicated fan controller instead of through the GPU. Is this feasible? I'm a novice when it comes to opening up GPUs, having built only a few systems before. Any advice would be greatly appreciated!

It's technically doable since the fans are standard 120mm. However, the challenge lies in ensuring you can adjust the fan speed based on GPU temperature when you remove them from the GPU. You might want to set up a system that monitors the GPU temp and responds accordingly.
