I'm installing Linux Mint Cinnamon on my computer, but I have a bunch of family photos and videos stored on a platter drive that I'd like to keep. Since my operating system will be on an NVMe drive, can I just unplug the platter drive during the install and reconnect it later? Do I need to transfer my files to a USB drive first or wipe the platter drive before I reinstall it into the Linux setup?

Yeah, I second that! As long as the drive is NTFS or another compatible format, you won't need to wipe it or move your files to USB. And there’s no necessity to mess with the drive until you reinstall. Just connect it back once your Linux Mint setup is complete.
You can totally unplug your platter drive while installing Linux. Once you're done, just plug it back in and it should work fine! Linux can handle NTFS file systems, so as long as your drive is formatted that way, you're good. If you want, you can set it up to mount automatically when your computer starts up, which is super handy! Just a tip: it's often safer to disconnect drives that aren't involved in the OS installation, just to be on the safe side.
Also, about Zorin OS vs. Mint—some people recommend Zorin for newcomers because it's very user-friendly. But Mint is solid too! Stick with whichever you feel more comfortable with. Both are great distros!
