I'm swapping out my 3080ti for a 5070ti, but I only have two PCIe cables available for my SF750 power supply, which I think is an older version. The PSU has a three-way connector for the GPU, so I'm wondering if I can temporarily use one of the PCIe cables with pigtails until I can get a new cable that fits the PSU properly. Is this safe?

Using a pigtail adapter for a short time is generally okay, but if you plan to keep the setup long-term, I highly recommend switching to a native ATX 3.1 power supply. A lot of connector issues arise when people use adapters instead of the proper cables.
Two PCIe cables should work just fine! The 3080ti uses more power and has worse transient spikes than the 5070ti, so you're in a good spot. Just keep in mind that adapters can fail, but it's not common unless you're dealing with the 5090.
