I recently noticed that my WiFi connection suddenly dropped, and now my WiFi app, which is eero, shows that the 'Offline Devices' list is completely empty. It says, 'No results - Oops! We didn't find a result for your search. Please try again.' I have a restraining order against my ex, and I've used my WiFi logs as evidence to show that his phone connected to my network when he was at my apartment. Since he knows I have this evidence and with the timing of these issues, I'm worried that he, having a background in IT and now working with a lawyer, might have the ability to delete evidence from my WiFi app. Is it technically feasible for someone with just the WiFi name and password to remotely clear the offline devices list, especially if they are tech-savvy?

If your WiFi password hasn't changed and he still has access, it's definitely possible for him to log into the router and clear the logs or device list. If he was tech-savvy, he could easily make those changes without you noticing.
For your app to show recent connections, it must have timestamped logs. If that’s the case, you should have evidence of when devices were last connected. But yeah, if he didn't change the router password, he could wipe the logs directly from there.
Exactly! If he has access to the network and hasn’t changed the router's default password, he can perform administrative actions like clearing the device history without a hitch.
