It sounds like you have a great plan! Just to add, moving the stock fans to the top and using the new Phanteks fans at the front for an even 7 fans setup sounds like a smart move. That should help with airflow and aesthetics!
One thing to consider is the power supply wattage; 850W should be plenty for your build, but always good to check if you plan to overclock or add more components later.
