So, I'm using an iPhone 12 with iOS 18, and for some reason, I decided to set my passcode to 181 characters (random, I know!). The weird thing is, I can still unlock my phone with this passcode, but now I'm having trouble accessing the 'Face ID and Passcode' section in Settings to change it back. Every time I try to enter my passcode there, it just kicks me out of that section like I never even typed anything. It seems like it can't handle my super-long passcode? Now I'm stuck and can't change it back. If anyone has any ideas on how to fix this, I'd really appreciate it!

This situation is definitely a bit funny, but it sounds like you might be softlocked. Basically, that means you've created a situation where your phone isn't able to accept your passcode in certain areas. Unfortunately, if you can't access the settings, your only real option might be to do a factory reset, which would wipe everything. Just make sure to back up your data first if you can!
You're in a tricky spot! Unfortunately, without going through an MDM solution (which only works in supervised environments), there aren't many options. The usual recommendation I would have is to try Apple Configurator 2, but it seems you found the same issue I did — it only works in Supervised Mode.
