How can I set up a system to track visitor data using WiFi?

My company recently acquired an empty space that has no IT infrastructure apart from an ISP router, and we want to convert it into a visitors center. The person overseeing this location wants a way to collect visitors' data, like email addresses and phone numbers, as well as track how often they visit and the duration of their stay. They're open to budgeting for this project, but it won't be very substantial. As the IT person at the company, I've been tasked with finding a solution, creating a shopping list, and estimating the time it will take. Has anyone here implemented something similar in their organization? What approach did you take?

That might not always be an option. In some places, for example, my company has to log every visitor due to government contracts, so tracking is required.

You could make visitors sign up for the WiFi through a landing page, similar to how many cafes like Starbucks do it. Most WiFi platforms provide this feature. Trying to gather data in other ways could be problematic from a legal standpoint.
