I have some real flight simulator disks, but when I insert them into my disk drive, they just show as files on my computer without any option to start the game. I'm unsure how to actually launch the game since I only see the files. It would have been easier to explain with screenshots, but I was told that wasn't necessary.

You're dealing with a 20-year-old Windows game here. It's unlikely to run on Linux without something like WINE. If you're on a modern Windows machine, keep in mind that many OSs won’t automatically run disks anymore for security reasons. You usually need to explore the disk in your file explorer and find something like setup.exe to install.
