I have an old Acer E1-531 running Windows 10, and I'm really struggling with constant 100% disk usage. I've heard switching to an SSD could make a huge improvement. Can anyone explain how I can switch to an SSD and still boot into Windows 10 afterward? I'd also like to keep some files that are currently on my HDD.

Here's what I would do: Get Clonezilla on a small USB drive, and find an external SSD enclosure that connects via USB. Boot from the USB, clone your HDD to an SSD that's the same size or bigger. Once that’s done, just swap out the old HDD with the new SSD in the same place and reconnect everything as it was.
You could also free up space on your old HDD by moving files to a flash drive or deleting unnecessary items. Honestly though, upgrading older equipment like this often feels like it’s not worth it. But I get it, dealing with slow boot times can be really frustrating.
The easiest way to handle this is to find someone with a computer that has enough space and ask them to help you copy everything from your old HDD to the new SSD. If that’s not an option, a local computer shop can do it for you, though they may charge a small fee.
You might be able to clone your old disk to the new one using another computer, but I'm not sure how well Windows will adapt to that. Personally, I’d recommend installing Windows 10 on a USB drive and doing a fresh install. This way, you'll also get rid of the Acer bloatware. For your files, use a SATA to USB converter or an external drive enclosure to access your old data under Users/(your old username).
