How Important is VRAM for Gaming on a 49″ Ultrawide Monitor?

Hey everyone! I'm looking to upgrade my current setup from a 34" 165Hz Samsung Ultrawide to a 49" OLED Ultrawide. My PC is a bit outdated, and I can hear my GPU maxing out at 100% while gaming, so I'm a bit worried that adding more pixels with the new monitor will only worsen the performance. Here are my specs: 5700x3d, 32GB RAM, and a 3070ti. My upgrade plan is to go for a new GPU first, then the monitor, and finally upgrade my CPU and RAM later this year. I've been checking out GPUs like the 9070xt, 5070ti, and 7900xtx for the best price/performance. I mostly play games like Ghost of Tsushima, Cities Skylines, Supreme Commander, Far Cry, Assassins Creed, and GTA5, and I want to be ready for new titles like Tempest Rising and GTA6. My main question is about VRAM: how crucial is it for gaming on ultrawides? Should I prioritize the 24GB in the 7900xtx over the 16GB options? Thanks for your help!
