I just picked up a Sapphire RX 7800 XT Nitro+ and I'm using a Corsair RM850e power supply from 2025. The GPU requires two 8-pin connectors, but I only have a 12V-2x6 and two remaining PCIe cables. I have one cable that goes from 8-pin to 6+2 and another that connects 12V to 2x6+2. Which setup should I use? Should I consider getting another cable?

Your PSU should have a cable that converts the 12V-2x6 into two 6+2-pin connectors. I'm unsure why you're concerned about not being able to use this. Just plug it into the PSU, and you can connect both connectors to the GPU. If you feel short on cables, remember there should be others in the box! You could have more options than you think!
I have the same GPU and I'm using the 2x8 splitter that came with my Thermaltake Toughpower GT 850W, and it's working great. Just remember, don't use cables that aren't from your PSU, it's risky!
My PSU suggested connecting for newer GPUs to the 12V, since they often provide better support for high-performance cards.
I'd recommend using the 8 to 6+2 cable you have. It's also best to stick with the cables that came with your PSU since using non-original cables can lead to issues due to differing pin layouts.
If you want to connect two PCIe cables, you should definitely go for the one that connects to the 12V. That's the way to do it.
I’m not trying to argue, but I really don’t think I have five connectors available. I checked my PSU specs and only see the 8 to 6+2 and the 12 to 2x6+2 cables listed. The others seem to be for the CPU.
