I recently bought a used Samsung S7, but the previous owner didn't reset it before selling it to me. I managed to reach out to them, and while they're willing to help unlock the phone, they don't want to give me the password directly. Now that I've factory reset the device, is there any way to make it usable again?

If you know the previous owner, definitely ask them for help! They might be able to assist you over the phone too. But if they’re not cooperating, then you’ll need that password for sure.
Unfortunately, the only way to get past the factory reset protection is by using the original owner's password or getting them to enter it for you. Think about trying to set up a meetup; once they input it, you can link another account, and it should unlock the FRP for you.
