I'm stuck in a situation where I can't upgrade my work computer from Windows 10 because it's ancient and we wouldn't get approval for that. Instead, I'd like to install Linux alongside it in a dual-boot setup. I have about 25GB of free space on my desktop, and I'm wondering if that's enough for any Linux distributions. I was leaning towards Linux Mint, but I'm open to suggestions for other distros that might work better. Any advice?

Yeah, you should be good with that! Generally, you don’t need separate partitions for the home or boot directories in your case. Just use the available space for everything. Your existing EFI partition should work fine for the bootloader.
