I'm wondering if a single tower air cooler would be sufficient for my Ryzen 7700X. I'm a fan of the Peerless Assassin and the AK620, but my Corsair Vengeance RGB RAM is too tall for those coolers. Raising the cooler fan isn't an option for me since I plan to add two more RAM sticks in the future, and I believe the cooler would block the first RAM slot anyway. Would it be better to just go for an AIO cooler instead?

Don't overlook the Noctua NH 12U; it's a legit option for keeping your CPU cool, and it's compact enough not to interfere with your RAM.
The Arctic Freezer 36 is another solid choice. It's a bit smaller but offers dual fans for better cooling performance, plus it's a reliable air cooler.
AIOs are often more about aesthetics than necessity. If you're primarily looking for performance, a good air cooler should handle the 7700X just fine, unless you really want to show off your setup with RGB lighting.
If you can fit a tower cooler, it might be easier to go with an AIO. There are budget-friendly options like the Thermalright Aqua Elite if you're looking to save some cash. If noise is your main concern, definitely consider the Arctic Liquid Freezer; it’s pretty quiet!
You might want to check out the Scythe Fuma 3. It doesn't block the RAM slots, and that's a huge advantage for your situation. Plus, it's really efficient for cooling!
Yeah, I heard Thermalright has a similar option too. Their Royal Knight cooler might be worth checking out!
