Does this build look good? Am I missing something critical or is there a way I can improve this setup on my budget?

I think you might want to reconsider your case and power supply, plus your storage could use an upgrade. Make sure your SSD is NVMe, not just using an M.2 slot. Also, having at least 1TB is pretty important these days, especially for gaming.
Honestly, if you're sticking with 1080p and want to avoid frustration with modern AAA games, you'd benefit from having 32GB of RAM. The gaming landscape is changing and some titles are not very optimized, meaning they can be a bit heavy on resources as they evolve.
I'm not really into FPS or competitive games—just looking to play stuff like Witcher 3 and RDR2. Do you think this build will handle those? I was hoping to upgrade RAM down the line.
I've been in a similar position and was happy with 1080p with a tight budget. I suggest swapping out the B580 GPU for an RTX 5050 (which is faster). My own rig had a lower CPU, and with DLSS turned on, I managed to run games smoothly at decent settings. If you can, try for an RTX 5060 instead to fit a bit better into modern gaming.
They're out of stock on the RTX 5050, and the RTX 5070 is way out of my price range! I wish I could have preordered it before the price spikes. Thanks for the insight though!
