I'm currently repasting my EVGA 2060 KO Ultra graphics card because I've been experiencing really high hotspot temperatures. I used Arctic MX-7 for the application. Is the amount of thermal paste I've applied sufficient, or did I use too much? Here's a reference image: https://ibb.co/kgjf1LnD

That's quite a hefty amount. It's best to apply a thin layer using something like an old credit card for even coverage. Just a thin layer is usually all you need!
It looks like you might have used a bit too much paste, but it should be fine. Just make sure to clean any excess that squeezes out. It won’t harm your motherboard, but it can be a pain to clean up!
You definitely have enough paste. For bare dies without a heat spreader, spreading the paste evenly ensures there are no hot spots. You can use the tube to push it around. Just remember, too much can be messy!
