I want a stable system that I can easily update without worrying about breaking things, and I'm not looking to heavily customize it. I've spent some time experimenting with different distros on a spare laptop and in a VM, so I've got a basic grasp of how Linux works. Is Pop!_OS the best option for me, or should I consider other distributions?

Pop!_OS with KDE Plasma isn't the best choice if you're looking for a KDE setup. If gaming is a major focus, I'd recommend considering a distro like Bazzite, which has an immutable setup, but it does require that you learn to adapt to that system.
Just a heads-up: stability and reliability are different. While 'stable' usually refers to how unchanging a distro is, Pop!_OS does have a solid release cycle. If you want something stable, look into Debian, Mint, or Ubuntu LTS versions along with Pop!_OS.
When Windows 10 reached its end of life, I switched to Zorin because it's really user-friendly and windows-like. I tried Pop!_OS and Mint too, but I still prefer Zorin overall.
Honestly, Pop!_OS with KDE is a fantastic choice for your needs. It has great gaming support, especially if you're using Nvidia drivers, and it's capable enough for video and photo editing. If stability is your main concern, you might also check out Kubuntu or Linux Mint KDE, but Pop!_OS is a strong contender, especially for Nvidia GPUs.
