I currently have a Sapphire Nitro+ 7900 XTX, and I'm still within the return window. I'm interested in doing video upscaling with AVCLabs video enhancer, and I've found that it performs significantly better on Nvidia cards. I'm considering returning my 7900 XTX for a 5080. What do you all think? Is it worth the trade-off? Thanks!

The 5080 is definitely better for your needs, but it’s going to cost more. If you can swing the price, go for it! Just don't expect it to be twice as good for double the price.
In the end, I’d say go for the 5080. If your work revolves around video enhancement, Nvidia's technology is way ahead right now, especially when combined with their features like ray tracing. If only AMD had better software support!
There may be some upcoming drops for the 5080, so if you have a bit of time, it might be worth waiting a week to see if you can snag one during the Founders Edition release.

I've heard some mixed things about the 5000 series, like overheating issues related to power cables and chips. Just keep that in mind if you decide to upgrade to the 5080.
