Also, I just realized that I had XMP turned off, so I hope that might improve my current performance. Before deciding to possibly switch out my entire rig, I want to know: Is switching to DDR5 a game-changing upgrade, or could I get by with better GPU options instead?

Honestly man, just focus on upgrading your GPU. Your current system is still solid and will last you for another few years with a decent GPU upgrade. The 5700X3D is still a powerful CPU for gaming.
