I'm searching for note-taking applications that can serve as alternatives to OneNote on Linux. Specifically, I need a tool that allows for unlimited page length, has an option for no pagination, lets me organize pages hierarchically, has page encryption (optional), and provides various text properties. I tried using Obsidian, but I couldn't find the text properties menu or ribbon that I was looking for.

Joplin is a fantastic open-source option! It lets you sync with your existing cloud accounts which simplifies everything. You can also organize notes into folders and even encrypt them for added privacy.
You might want to look into Trilium Notes as well. It's not OneNote but has some nice features for organization and note taking.
If you’re after something simple, consider using OneNote on the web. It covers most of the functionalities of the desktop app but lacks embedded Office files and printing support. If you want something really basic, Simplenote is also an option.
Definitely check out Joplin! I've replaced several notebooks with it. It supports Markdown for text formatting just like Obsidian but comes with a WYSIWYG editor, plus encryption and syncing through cloud services.
If you enjoy handwriting, rnote could be what you want! It’s a neat tool for handwritten notes.
