I'm in search of a white motherboard that works well with my AMD 5080 and 9800X3D. Right now, I'm considering the Gigabyte B850 EAGLE ICE ATX AM5 since it's quite affordable in my area. However, I'm unsure if it's a good choice. Does anyone have experience with this board? Also, would a 1000W PSU be better, or is an 850W PSU sufficient for this setup?

Check out the ASUS B650E Max Gaming WiFi board. It's a great motherboard with solid performance, even if it might be a bit pricier. You can find it here: https://pcpartpicker.com/product/QtnXsY/asus-b650e-max-gaming-wifi-w-atx-am5-motherboard-b650e-max-gaming-wifi-w, but keep in mind it might be overstocked.
If you're looking for a clean aesthetic, NZXT offers white motherboards with a nice cover on the PCB for a tidy look. Here's one I found: https://pcpartpicker.com/product/nBvscf/nzxt-n9-x870e-atx-am5-motherboard-n9-x87xt-w1. Just know they can be a bit on the expensive side!
Yeah, it's pretty much overpriced right now with no clear restock date!
