I recently upgraded my graphics card from an RTX 2060 to a second-hand RX 6800 XT. Initially, I was using a 650W power supply, but since AMD recommends a minimum of 750W, I decided to stick with the 650W for a test. Unfortunately, it shut off during a demanding game, which led me to buy an 850W PSU (an Inter-Tech Argus BPS-850, which might have been a mistake). Even with the new PSU, the issue persists.
It shuts down a couple of minutes into a heavy gaming session, with fans still spinning and RGB lights staying on for a few seconds before the debug lights blink between VGA, CPU, and DRAM. I have an AMD Ryzen 5600X, a Gigabyte B550 Aorus Pro AC, Corsair Vengeance DDR4-3200 (4x8GB), and the Gigabyte Radeon RX 6800 XT 16GB.
I'm worried I might have bought a defective GPU or if it was foolish to go for a cheaper PSU. Is there anything else I might be overlooking? I tried undervolting the GPU in AMD Adrenaline, and while it happened again, it seemed to last longer. Does this indicate a problem with the power supply?

First things first, check your GPU temperatures while gaming using HWInfo64. If the GPU is overheating, that could definitely cause shutdowns. If temps look fine, then it’s likely your power supply that’s the issue. Remember, wattage isn't everything; a good 650-750W unit can handle your setup just fine.

I checked, and both GPU and CPU stay in the 60°C range, sometimes hitting 70. So I don’t think it’s overheating. I just wish I had splurged on a better PSU right off the bat.
