I recently built my PC a few months ago and I've finally got a chance to buy a GPU. I'm considering the 9060 XT with 8GB of VRAM because it fits my budget. However, I've come across a lot of negative feedback about 8GB cards which makes me think twice. I mostly play competitive games and don't get into many AAA titles. What do you all recommend? By the way, I have a Ryzen 5 7600X processor.

Trust me, don’t go for 8GB. You'll likely regret it down the line.
Just get what fits your budget. Sure, 16GB is better, but if you don't think you'll need it and the 8GB fits your budget, then go for it. You can also check the used market; I’ve seen 3080s with 10GB for around $300 and even 6800XTs. Good luck with your search!
If you can, definitely go for the 16GB version. It’ll give you more headroom for future games and demanding applications.
How reliable is the marketplace for buying used GPUs? I just spotted a 7700XT for $325.
