I'm planning a 5-hour drive with my PC. I have a Hyte Y70 case with a vertically mounted Phantom 7900XTX. Should I take out the GPU for the trip, or is it safe to leave it in?

Honestly, it takes longer to type out a post on Reddit than it does to take out the GPU. Just do it; you'll have a way easier time reinstalling it than worrying about what could happen during the drive.
If you still have the box your GPU came in, it's best to pack it separately for the journey. The PCIe slots are quite fragile, and it's better to be safe than sorry on the road.
When I moved to another city, I decided to remove my GPU just to be safe, even though I thought it would be fine. I had a bumpy ride and I was glad I took it out. It only takes a few minutes, and you'll have peace of mind.
I'd seriously recommend removing it and securing it in a bag or something. If you hit a bump or have to brake suddenly, the GPU could get damaged—and who wants to risk losing something that expensive? Just take 5 minutes to be safe.
If you're driving on smooth roads and the PC is secured properly, it should be fine. But of course, any bumps or sudden stops could cause problems, so it's a bit of a gamble.
