I'm currently using a Gigabyte RTX 3070 8GB and I'm tempted to upgrade to the RTX 5080, which is priced at $1,484. I realize this isn't the best time to buy, but I worry it might only get worse. Do you think it's worth upgrading now, or should I hold off and wait?

Consider getting a 5070 Ti instead. There's only about a 15% performance boost from the 5080, but it costs 50% more. The 5070 Ti actually uses the same chip and VRAM as the 5080, just a bit less powerful since it has some cores disabled.
It's funny how the performance difference keeps changing. One day it's 30%, the next it's 15%. But yeah, while the 5070 Ti offers better value, I'm really happy with my decision to go for the 5080. It's a beast when overclocked!
