I'm currently running a setup with a 9070 XT and a 7800X3D powered by a 650W PSU, which has been working just fine. I'm considering upgrading to a Montech Century II and I'm unsure whether I should opt for the 1050W version or spend a bit more for the 1200W version. What do you think?

PSUs are rated for their maximum output, so they only supply the power your components require. If your current 650W is handling your system without issues, then you really don't need the extra capacity of a 1050W or 1200W. It seems like you're trying to fix a problem that isn't there. Just stick with what you've got unless you plan on adding high-power components.
I just want to add that I'm thinking of upgrading my monitors, which could draw more power.
