Suggestions for a Productive Dual Monitor Setup

I'm setting up a home office in my childhood home and need to build my first dual monitor setup. I've been self-employed as a trader and used dual 24" monitors in my previous office job, but I'm not sure about the specs. My MacBook Pro with i9 will handle the setup through a Thunderbolt dock, using either HDMI or DisplayPort. I'm trying to keep costs down because my main rig will be a 49" ultra-wide in my office later. I'm considering different options for dual monitors:

- Dual 27" 1080p - cheapest, but I've read 1080p isn't great for productivity.
- Dual 27" WQHD (2K) - a bit more expensive, but is it worth it?
- Dual 27" 4K - much pricier, but would it be overkill?
- Also looking at dual HD and WQHD 30-31.5" screens, but I'm concerned about how 1080p would look at that size.

I need a setup mainly for reading documents, browsing multiple windows, market data, heavy Excel sheets, and occasional light video editing, with me sitting about 3 feet away from the screens. I've been checking brands like Lenovo, Acer, and MSI, as Dell is usually out of my budget. I hope you guys can help me find a decent bang-for-buck dual monitor setup!

You'll want to ensure that your MacBook can handle the resolution you choose. Both the laptop and the Thunderbolt dock need to support the monitor's resolutions. If your MacBook was advertised to handle multiple 5K displays, then it should have enough power for 2K or 4K monitors without any issues. Just double-check that your dock can do the same!
