I really think 8GB won't cut it for 1440p gaming. You might run into performance issues. If 1080p is your main focus, you might still be okay, but be prepared to potentially lower some textures in the latest games.
Honestly, you might be better off with a 6700XT or the B580 if you're going for something new. The 6700XT seems to be out of stock around here, and the B580 requires a solid CPU to work well.

I saw 6750XTs for just $317 at MicroCenter last month. Better deal with more power and VRAM than the 4060.
