I'd also like to know if I should look into AMD as an option, even though I have mixed feelings about Nvidia. Additionally, I run a few CPU-intensive programs like Houdini and Reason, so I want to ensure my CPU is capable.

You should consider either the 5060 Ti or the 5070 Ti; both have 16GB of memory and should perform well at 2K.
You might want to check out the AMD 9070 XT or the 9060 XT. Both could do well with your setup.
