It really comes down to what you need! I suggest starting with a minimal distribution so you can learn along the way. As you use it, you'll figure out what programs and tools you actually want. Customizing is a fluid process—you'll often find yourself wanting something to work or look a bit differently, and that's when the fun happens!
I'd recommend starting out with a stable desktop environment like GNOME or KDE. Once you’re comfortable, you can layer on a tiling window manager or something else. That way, you can tinker without risking your whole system, which I've learned the hard way!
