You'll need to download the right .ipsw file for the version you want, maybe iOS 18 if you have iCloud saves from that. Just use a reputable site like ipsw.me for the files. Once you’ve got it, connect your iPhone to your Mac, hold the Shift key while clicking restore in Finder, and select the downloaded file. It should prompt you to use that for the restore process.
