I'm building a Mini ITX system and I'm looking at a power supply for my RX 9070 XT, which requires 750W. Should I go for an 850W or a 1000W PSU? Would it make a difference since I'll be using an SFX power supply?

Yes, I'm pretty sure it’s the RX 9070 XT you're referring to. For most builds, an 850W seems perfect. It gives you some headroom, plus AMD cards can have occasional spikes in power draw.
850W is more than enough and it'll give you that extra bit of headroom. I'd suggest something like the Corsair SF850 (2024); it’s an 80+ Platinum certified unit, and I've had great experiences with Corsair's SFX PSUs.

What CPU are you using with the RX 9070 XT? An 850W PSU should generally be more than enough for most setups. Just double-check if you're referring to the RX 9070 XT, not the nonexistent 9070 Ti, haha!
