If video editing is your main focus and you're using Quick Sync, Intel might be your best bet. Their 200 series CPUs, especially the 285K, still have a strong edge in video editing benchmarks. While the X3D CPUs are optimized for gaming, the Intel 200 series can still handle your editing tasks just fine.
If you're considering encoding capabilities, the new Nvidia 5000 series GPUs have complete codec support, which means you might not need Quick Sync anymore! You could also look into the 9950x3d for its core count in rendering and gaming.
Based on your needs, the Intel 14600K could be a great fit. I recently upgraded to it, and I'm really pleased with the performance. Just make sure to get a solid air cooler; I went with the A620 Pro SE.
The 14900KS is said to be the best for video rendering among commercial CPUs. However, make sure to check benchmarks for specific software—some might show the 285K performing just as well without the extra cost.
