I have an old laptop with an Intel i5 (3rd gen), 6GB of RAM, and a 256GB HDD. It's running super slow, even with popular Linux distros like Linux Mint and Ubuntu. I've switched back to Windows for now. Does anyone know of a Linux distro that feels similar to Windows and can run well on this setup?

Zorin OS Lite or Linux Lite are great options to try out! They look and feel a lot like Windows, and they're optimized for older hardware, so they should run smoothly on your laptop.
Definitely consider upgrading to an SSD! It's the first step that can really improve performance. Your hardware should work fine with Linux Mint, but that HDD is really holding you back. A cheap SSD can make everything feel so much snappier, even if you decide to stick with Windows.
