I'm looking to upgrade from my Ryzen 5 5500 and I'm torn between the Ryzen 7 5700X3D and the Ryzen 7 5800X. I'm not worried about integrated graphics; I just want the best performance I can get for gaming and productivity. Any advice on which one to go for?

If gaming is your main focus, definitely go with the 5700X3D. It's designed to give better performance in games. However, if your work mainly requires good CPU power but not for gaming, the 5800X is also a solid choice—just grab whichever is cheaper when you're ready to buy!
For gaming, the 5700X3D is a clear winner! But if you're leaning towards productivity tasks, the 5800X can hold its own too, albeit with some limitations. Just bear in mind that the 5700X3D is basically a slightly lower binned variant of the 5800X3D, so it performs well in both areas.
So it sounds like I'd be safe going with the 5700X3D for both gaming and some productivity tasks!
