I'm trying to set my AOC Q27G2S/EU 27" LED IPS QHD monitor to a resolution of 2560x1440 with a refresh rate of 144Hz. However, whenever I try to set a refresh rate higher than 60Hz, the resolution automatically changes to 1920x1440. I'm using an HDMI 2.0 cable, and my GPU is an Nvidia 3060 Ti. What could be causing this issue?

Since you mentioned you're already using HDMI 2.0, it might be better to switch to DisplayPort 1.4 or higher. DisplayPort often has better support for high resolutions and refresh rates compared to HDMI in many cases.
First thing to check is whether you have the latest GPU drivers installed. Make sure that your monitor is properly connected to the GPU HDMI port and not the motherboard. If your HDMI cable is old, it might not support the necessary bandwidth for higher refresh rates. Consider upgrading the cable if it’s been around for a while.
I’ve run into this before! Sometimes HDMI can limit your refresh rates. It’d be worth trying a DisplayPort cable instead for a more reliable connection. Cable compatibility can be confusing, so make sure you’re using a version that's capable of supporting high refresh rates.
I’m using an 8K ultra high-speed HDMI cable that specifies it supports up to 8K@60Hz and 4K@120Hz.

I just updated the drivers and I'm definitely connected to the GPU. The cable is brand new, and it’s an 8K cable that supports up to 8K@60Hz and 4K@120Hz.
