I'm thinking about buying a 5060 Ti in the next couple of months. Right now, I have a Ryzen 7 5700X, two SSDs, two HDDs, and 32GB of RAM (8x4GB). I've been using a Cooler Master MWE 500W PSU with my 2060 for the last five years without any problems. Do you think I need to upgrade my PSU for the 5060 Ti, or can I stick with what I have?

I'd recommend getting at least a 650W PSU for optimal performance and stability. The new GPU will likely draw between 170-200W, and when you consider your CPU and other components, your total consumption under load could go over 300W. A PSU is most efficient at 50-60% load, so you'd be better off with a higher wattage unit.
It might work for you since the 5060 Ti isn't too power-hungry, but I wouldn't risk it. It's a good idea to upgrade your PSU.

I don’t think that's completely true anymore. Modern 80 Plus rated PSUs are designed for efficiency across a wider range, so the difference might not be as significant as you think.
