I know I'll need a USB-A to USB-C adaptor, but does it have to be a specific audio one, or will a standard adaptor do the job?

It's a bit tricky. Generally, USB headphones like yours require drivers that your phone might not support. If they do need power, remember that your phone's USB port usually doesn't supply it, which could be a problem. You might want to look into an OTG adapter, but powered options are necessary if your headphones draw power.
Actually, Android phones can send power through the USB port. I've charged another phone using an OTG adapter!
