I'm planning to get a new phone and I want to move my apps, files, and sensitive data like photos and emails without just copying them over. Is there a way to do this, perhaps like relocating a photo to a different album?

I don’t know of any way to move data without a copy happening first, honestly. Some tools will move blocks or individual files, but all data transfer operations I know of involve a version of copying. Just make sure to do a factory reset afterward if you want to clear your old device.
