I'm currently using my sister's PC, which has a Ryzen 5600X and a 3060. I like it, but I need something a bit better. I'm planning to build my own PC and want recommendations for a GPU that pairs well with a Ryzen 5700X or 5800X. I'm sticking with AM4 since DDR5 prices are too high, so upgrades to AM5 CPUs are off the table for me. Right now, I game at 1080p, but I might switch to 1440p, mostly on low to medium settings. My budget for the GPU is around $250 to $350, but I could stretch to $400 if necessary. Here are the cards I'm considering: 6800XT 16GB for about $350 (concerns about power draw), 7600XT 16GB for $280-290, 7700XT 12GB for $330, 3070 Ti 8GB for $300 (concern about VRAM), 3080 10GB for $350, 9060XT 16GB for $350, or 9060XT 8GB as a last resort for 1080p gaming. Any insights or recommendations would be greatly appreciated!

I’ve got a 6900 and a 5700X, and I can tell you that it can get CPU-bound in demanding games like Cyberpunk and Battlefield. But for your budget, the 9060XT 16GB is a solid make, and honestly, the RX 6800XT 16GB is probably the best value you can find right now.
When you're ready to build, use PCPartPicker. It's a great tool to track prices, and I'd suggest waiting until after Christmas for deals on most components, except RAM and SSDs which are stable.
I also recommend the 9060XT! I have it paired with a 5700X and 32GB of RAM, and it handles 1440P really well. Most games run on high settings at 60 FPS or more, even with ray tracing for titles like Cyberpunk 2077.
Have you noticed a big difference between using 16GB versus 32GB of RAM? It seems like at 1080p it might not matter, but maybe at 1440p it makes a difference.
Get that 9060XT 16GB without a doubt. If you also upgrade to a 1440p monitor, you'll be golden. The 5600X won’t cause any bottleneck issues with it.
